What you’ll learn

To wrap up our cooking adventures for this course, we’re putting the “cherry on top” so to speak by learning how to bake a variety of desserts from cobbler to cookies to brownies, and more. Become familiar with a some staple gluten-free flours and check out the Extra Recipes for non-baked Desserts & Treats for that well-rounded goodie box. Consider this module the celebration of all your hard work these last few months!

The objectives for this module:

  • Learn to make a classic cookie recipe and how to create myriad variations
  • Master a simple fruit cobbler and learn how to adapt it for countless change-ups
  • Try baking up our classic cake-like brownies and take them to the next level with some of our Extra Recipes like Butterscotch

1: Desserts & Treats Overview

You’ve already learned how to make Desserts & Treats like pudding, gelato, and crumbles so far. Now, let’s add a few more classics to your cooking (and baking) toolbox.

As always, we’ll provide loads of tips as you go so you can change up these recipes depending on what you have or what your food mood is. We’ll also show you how to batch cook and remix these recipes for different variations. There are a few recipes in this module that utilize similar flours, this is intentional, so you use up what you buy.

This is your last module for Good Food Cooking Basics—congrats on all your work!

2: Desserts & Treats Lesson Recap

Your Lesson Recap will be your personal inputs of progress (photo and written). Grab your cooking journal, prepare at least one Practice Recipe, then complete this recap.

You must complete the recap to complete the module and eventually the course.

Practice Recipes

Recommended: prepare a minimum of 1 recipe

Always read the entire recipe before preparing it so you have the right ingredients on hand and the tools you need to make it effortless. You’ll be trying some baking in this module. We call for similar flours in each recipe to show you how versatile they are, and so you can use up what you buy with a variety of delicious creations. Remember your friend mise en place—it also applies for Desserts & Treats!

Chocolate Chunk Oatmeal Cookies

Chewy and loaded with dark chocolate chunks, this classic cookie is a treat as-is, or you can take it to the next level and turn them into ice cream sandwiches!

Strawberry Cobbler

This is one of those versatile desserts that takes hardly any effort, but everyone raves about. Make it once our way and then use the Variation and Substitutions to change it up for countless creations.

Classic Brownies

Practice some baking with these simple, cake-y brownies and try them à la mode with the Extra Butterscotch Recipe for a next-level treat.

“Pantry to Plate” Challenge

Knowing how to open your pantry or fridge and make what you have into something special is a must-have skill these days. We’re showing you how it’s done with this course and if you want more practice, more tools, and more reward for your efforts, grab a copy of the book that inspired Good Food Cooking School: Pantry to Plate.

The Challenge: from your copy of Pantry to Plate, use the Nice Cream Recipe Template on page 280 plus everything you’ve learned so far about flavor building to make a homemade batch of dairy-free ice cream, aka Nice Cream.

Follow the steps, recommendations, and guidelines from Pantry to Plate, but make it your own. Grab your cooking journal and document what you try and why. And remember, always taste as you go.

Use this as an opportunity to try a new spice, fruit, or special secret ingredient. Think of fun textures, too. Mash some Banana Muffins into your ice cream for chunks of “cake,” or fold in some Cherry Compote and chopped chocolate bar because, why not? How about cinnamon, cacao, and cayenne? Yes. Probably a good idea…

Required to complete The Challenge: Share one photo and your experience with the Challenge in the fields above. 

Optional, but encouraged: Share in the private classmates group and show us your creations on Instagram (tag @YumUniverse and #pantrytoplate).

Earn 3 Credits = $3
